LABORATORY OF FOOD CHEMISTRY NATIONAL & KAPODISTRIAN UNIVERSITY OF ATHENS

The Department of Chemistry is part of the University of Athens and the Food Chemistry Laboratory is part of Sector II of the Department of Chemistry. In 1922 the Department of Chemistry of the NKUA acquired the Chair of Food Chemistry and is one of the first departments of Food Chemistry in Greece. Today the laboratory is active in various research projects, provides specialized services in food analysis to both public institutions and companies and is composed of three faculty members.

DESCRIPTION

Qualitative and quantitative determination of bioactive constituents (polyphenols, vitamins, carotenoids) of foods (e.g. infusions, herbal products) and essential oils and study of their antioxidant capacity.

Study of heavy metal levels (such as Cd, Pb, Hg, As) in foods of Greek origin (Plant and Animal) and in processed foods (e.g. canned foods) and their migration from the packaging to the food.

Fungi in food, isolation and identification of their toxic metabolites in food.

Study of factors affecting the biosynthesis of toxic metabolites of fungi in agricultural products Development and validation of methods for the identification of mycotoxins in food.

Study of allergenicity of food and genetically modified organisms.

Qualitative and quantitative determination of lipids of aquatic edible organisms (fish and seafood) [mainly polyunsaturated fatty acids (EPA, DHA), sterols, triglycerides, phospholipids, carotenoids], as well as of essential minerals for the assessment of their nutritional value.

After the approval of action 2 and for the whole project, the company AIK. ZIKA and E. KAILAS & Co., Business Consultants, which has the necessary expertise in the management and implementation of research projects, will undertake the development of the bilingual website according to the WCAG 2.0 standard for the promotion of the project, the progress of its implementation, the deliverables and documentation as well as its results. The Agricultural Cooperative Stevia Hellas, based in Lamia, Fthiotida, is a Standard Cooperative for the cultivation and standardization of stevia products.

The Agricultural Cooperative Stevia Hellas, based in Lamia, Fthiotida, is a Standard Cooperative for the cultivation and standardization of stevia products.

It was founded in 2012 and is composed of 87 producers and a 10-member management team. Since the beginning of 2015, having successfully passed the stages of trials and experiments in cultivation, as well as finding a partner in Europe for the processing of the leaves, it has begun to distribute its products under the brand name “La Mia Stevia” both in Greece and abroad. The activities of the Cooperative include participation in European programs, RurInno, RurAction, in which the members of the Cooperative are trained on social entrepreneurship, rural development and sustainability of rural areas.

Also, it has managed to be the only co-operative in Europe, which cultivates stevia on a large scale, while its product is the only 100% European product made from Greek stevia leaves.

The producers of the Agricultural Cooperative Stevia Hellas will provide or hire experienced, competent and adequate human resources, and will provide or lease adequate mechanical and technological equipment.

Following the approval of Action 2, the producers of the Stevia Hellas Agricultural Cooperative will assist in the sowing of the legume crop, as well as in the cultivation preparations and care, and will also be active in the promotion of the project both locally and internationally through the network in which they participate.

From the very first moment, Mr. Ilesion cooperated with TROFINO because it was an organic rice mill. It is where the rice is dried, separated, husked, wet heat treated and standardized, as well as the moisture and strength control of the products.

After the approval of action 2, the industry of Argyraki S.A. will undertake the transport of the products to its premises, the control of the basic elements of the rice (moisture, friability, yield, etc.).

It will proceed with the processing of the rice by hulling and standardisation.
